Sweet Potato Honey Beer Pie 

For the Crust: – 1 1/4 cups all-purpose flour – 1/2 teaspoon salt – 1/2 cup (1 stick) unsalted butter, cold and cubed – 1/4 cup cold water

For the Filling: – 2 cups mashed sweet potatoes (about 2 medium sweet potatoes) – 1/2 cup honey – 1/2 cup brown sugar – 1/4 cup unsalted butter, melted – 3 large egg

– 1/2 cup beer (such as a pale ale or wheat beer) – 1 teaspoon vanilla extract – 1/2 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg – Pinch of salt

Step 2: Preheat the Oven Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish with butter or non-stick cooking spray.

Step 3: Make the Crust Mix all-purpose flour and salt in a large basin. Add cold, cubed butter and break it into flour with a pastry cutter or fork until it resembles coarse crumbs. Gradually add cold water and mix until dough forms.  

Shape the dough into a disk on a lightly floured surface. Roll the dough into a pie dish-sized circle. Gently push the dough into the dish's bottom and sides. Trim extra dough and crimp edges.   

Step 4: Prepare the Filling In a separate mixing bowl, combine the mashed sweet potatoes, honey, brown sugar, melted butter, eggs, beer, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until smooth and well combined.

Step 5: Pour the Filling into the Crust Pour the sweet potato mixture into the prepared pie crust, spreading it out evenly with a spatula or the back of a spoon.

Step 6: Bake the Pie Place the pie dish on a baking sheet (to catch any drips) and bake in the preheated oven for 50-60 minutes, or until the filling is set and the crust is golden brown.

Step 7: Cool and Serve Remove the pie from the oven and let it cool on a wire rack for at least 30 minutes before serving. Serve slices of the sweet potato honey beer pie warm or at room temperature, optionally topped with whipped cream or vanilla ice cream.
