Mini Blueberry Tarts 

Ingredients: – 1 package of pre-made mini tart shells (or you can make your own pastry dough) – 1 cup fresh blueberrie – 1/4 cup granulated sugar – 1 tablespoon cornstarch

– 1/4 cup water – 1 tablespoon lemon juice – Optional: whipped cream or vanilla ice cream for serving

Instructions: 1. Preheat your oven to the temperature specified on the package of mini tart shells, or to 375°F (190°C) if you're making your own pastry dough.

Place the mini tart shells on a baking sheet and bake according to the package instructions, or until they are golden brown if you're making your own pastry dough. Remove from the oven and let them cool completely.

In a small saucepan, combine the blueberries, granulated sugar, cornstarch, water, and lemon juice. Stir well to combine.

1. Cook the blueberry mixture over medium heat, stirring constantly, until it thickens and the blueberries start to burst, about 5-7 minutes. 2. Remove the blueberry mixture from the heat and let it cool slightly.

1. Once the blueberry mixture has cooled slightly, spoon it into the cooled mini tart shells. 2. Refrigerate the mini blueberry tarts for at least 1 hour to allow them to set. 3. Serve the mini blueberry tarts with whipped cream or vanilla ice cream, if desired.
