Greek Salad

Ingredients: – 2 large tomatoes, diced – 1 cucumber, diced – 1 red onion, thinly sliced – 1 green bell pepper, diced – 1/2 cup Kalamata olives, pitted

– 1/2 cup feta cheese, crumbled – 1/4 cup extra virgin olive oil – 2 tablespoons red wine vinegar – 1 teaspoon dried oregano – Salt and pepper to taste – Optional: 1/4 cup chopped fresh parsley for garnish

Prepare the Vegetables: – Dice the tomatoes and cucumber into bite-sized pieces. Thinly slice the red onion. Dice the green bell pepper. Pit the Kalamata olives if they are not already pitted.

Assemble the Salad: – In a large salad bowl, combine the diced tomatoes, cucumber, sliced red onion, diced bell pepper, and Kalamata olives.

Add the Dressing: – In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing.

Toss the Salad: – Pour the dressing over the salad ingredients in the bowl. Gently toss everything together until the vegetables are evenly coated with the dressing.

Add the Feta Cheese: – Crumble the feta cheese over the top of the salad.

Garnish and Serve: – Optional: Sprinkle chopped fresh parsley over the salad for additional flavor and garnish. – Serve the Greek salad immediately as a refreshing side dish or as a light and healthy meal on its own.
